Vegetable and Feta Frittata

Frittata’s are cheap, quick-cooking, and a great way to use up any leftover veggies from the week. You could serve some toast and a salad on the side. Now, if you do have a picky eater they might not like the look of all the ‘bits’ in the egg. If this is the case, you could try making the frittata with just the mushrooms and onion and leave the other veggies separate on their plate so that they can choose what to eat without all the drama ( I know what it’s like!).

Ingredients

  • 1/2 small red onion
  • 100g spinach leaves
  • 50g chopped capsicum
  • 50g mushrooms
  • 20g olive oil
  • 4 large eggs
  • 100g feta
  • salt and pepper

Instructions

  1. Add onion and veggies to TM bowl and chop 5 secs/Speed 5.
  2. Add oil and cook 3 min/Varoma/Speed 1.
  3. Add eggs to TM bowl and crumble in the feta.
  4. Season with salt and pepper.
  5. Mix gently 3 secs/Reverse/Speed 2.
  6. Put a pan on medium heat and pour in the egg mixture. Swirl around so the mixture covers the pan evenly.
  7. When the egg mixture sets on the bottom, turn off the heat and carefully place your frying pan under the grill for 3 mins, or until the top is golden and cooked through (check the inside with fork).
